Blueberry Pancakes

Pancakes day

It´s about pancakes today…what else there is to say other than there are a few things I just can not  get around on this blog. So freshly baked, fluffy pancakes with caramelized blueberries it had to be. Good for me as I was „forced“ to have this beautiful, all over the year dish once again.

Temptations everywhere

If you are into movies you may know how it feels, when you have these typically scenes, playing in classic diners, where we find the protagonist having that treat at any time of the day. You get this craving for this sweet dish and want to have it at the same moment. I thought I just give in and enjoy pancakes again. As the berry season is on anyways, I of course went for blueberries…so yummy, each time again. My day definitely ended with a smile on my face, so try my recipe and find out yourself.

Blueberries Pancake Dough

Pancakes Blueberry Compote

Pancakes & caramelized Blueberries

For 4 persons

For the Pancakes:

250 ml Milk
3 Eggs size M
200 g Flour
75 g Sugar
1/2 tsp Baking Powder
Peel of 1/2 organic Lemon
Salt to taste

For the Blueberries:

120 g Blueberries
40 g Sugar
25 g Butter
Peel of 1/2 organic Orange
1/4 Vanilla Bean

To Serve:

Cinnamon Sugar

  1. For the Pancakes separate the egg whites from the egg yolks and beat the whites with the sugar until stiff. Mix the milk, egg yolks, flour, baking powder and spices until smooth. Carefully fold the stiff egg white under the dough.
  2. For the blueberries caramelize the sugar in a pan and add the butter, then add the spices and blueberries. Now toss a little and remove the pan from heat.
  3. Heat up a pan with a little oil to medium heat and scoop in a bit of dough. Fry the pancakes from both sides until golden brown and sprinkle a little cinnamon sugar on top.
  4. To serve pile them up and add the blueberries.

Pancakes & karamellisierte Blaubeeren

Für 4 Personen

Für die Pancakes:

250 ml Milch
3 Eier Gr. M
200 g Mehl
75 g Zucker
1/2 TL Backpulver
abgeriebene Schale 1/2 Bio-Zitrone
Salz nach belieben

Für die Blaubeeren:

120 g Blaubeeren
40 g Zucker
25 g Butter
abgeriebene Schale von 1/2 Bio-Orange
1/4 Vanillestange

Zum Servieren:

Zimt-Zucker

  1. Für die Pancakes die Eier trennen und das Eiweiß mit Zucker steif schlagen. Milch, Eigelb, Mehl, Backpulver und Gewürze glatt rühren. Vorsichtig den Eischnee unter den Teig heben.
  2. Für die Blaubeeren den Zucker in einer Pfanne karamellisieren und die Butter zugeben. Dann die Gewürze und Blaubeeren beigeben, dabei etwas schwenken und vom Herd nehmen.
  3. Eine Pfanne mit etwas Öl erhitzen und den Pancaketeig in die Pfanne geben. Von beiden Seiten gold-gelb ausbacken und dann mit Zimt-Zucker bestreuen.
  4. Zum Servieren übereinander stapeln und die Blaubeeren anrichten.
