Burger cravings

You know from time to time one has this craving for junk food and a beer. If you ask me there is absolutely nothing wrong with it to give in, but there are ways to get both, pleasure and good food. A few days ago we had a tasting at work, where the guest asked for changes and a new menu without being to complicated. That was when this idea grew and I got to admit, the outcome was quiet satisfying. I know it is not the first burger out there and it definitely will not be the last, but it was a fine piece of food and I enjoyed every bite of it.

What is it exactly?

Bulgogi beef is actually a Korean style marinated beef. The sauce to do so is made of soy, sugar, garlic and sesame and once it got marinated, it is grilled. To accompany the beef I went for another famous Korean ingredient. Kimchi is all over Korea and is eaten to nearly every meal. I only made a small adjustment here and used cucumber instead of Chinese cabbage. The third actor of this dish and surely not to underestimate is the bun. Of course I love fluffy and slightly sweet buns but I thought I give it a go and try out a patty made of udon pasta. Et voila off we go. I hope you enjoy it and might do your very own burger. Bulgogi Burger

For 2 Persons

For the Udon Patties:

600 g Udon Pasta
2  Egg Yolks Size M

For the Bulgogi Beef:

300 g Beef
1 Spring Onion
15 g Ginger
15 g Brown Sugar
30 g Soy Sauce

For the Cucumber Kimchi:

250 g Cucumber
50 g Green Apple
1 Garlic Clove
1/2 tsp Chiliflakes
1/2 tsp Salt

To Serve:

Cream Cheese
Lamb´s Lettuce

1. For the udon patties, cook the pasta in salted water until soft consistency. Strain through a sieve and mix with egg yolks. Empty the pasta mix 1cm high in a cocotte with plastic wrap and cover it with another layer of plastic wrap. Put a weight on top and leave to freeze for one hour. Once the Pasta is half frozen cut out rounds of desired size and leave the patties in the freezer until serving.

2. For the Bulgogi Beef, cut it in thin slices. Wash the spring onion and cut it in thin rings. Peel the ginger and dice it. Now bring all ingredients together and leave to marinate for 30 Min.

3. For the Kimchi, wash the cucumber and apple and cut them in halves. Remove the seeds and cut both in thin slices. Peel the garlic and dice it. Now bring everything together and leave to flavor until serving.

4. For serving, fry the udon patties in a pan with hot oil until golden brown. Mould patties of the same size as the udon patties and fry for 2 min. from each side. Spread some cream cheese on each udon patty and put a bulgogi beef on top. Now arrange some Kimchi and a bit of lamb´s lettuce on top. Add the second udon patty on each burger and serve.

Für 2 Personen

Für die Udon Patties:

600 g Udon Nudeln
2  Eier Gr. M

Für das Bulgogi Rind:

300 g Rind (Hüfte, Filet etc.)
1 Frühlingszwiebel
15 g Ingwer
15 g Brauner Zucker
30 g Soja Sauce

Für das Gurken Kimchi:

250 g Gurke
50 g Grüner Apfel
1 Knoblauchzehe
1/2 TL Chiliflakes
1/2 TL Salz

Zum Servieren:

Frischkäse
Feldsalat

1. Für die Udon Patties, die Pasta in Salzwasser kochen bis sie weich ist. Dann durch ein Sieb kippen und mit dem Eigelb vermengen. Nun den Mix in eine Cocotte mit Frischhaltefolie leeren und mit einer weiteren Schicht Folie abdecken. Nun etwas beschweren und für 1 Stunde in den Froster stellen. Wenn die Pasta halb gefroren ist, Ringe in gewünschter Größe ausstechen und bis zum servieren wieder frosten.

2. Für das Bulgogi Rind, wird Dieses in dünne Streifen geschnitten. Die Frühlingszwiebel waschen und in dünne Ringe schneiden. Den Ingwer schälen und in kleine Würfel schneiden. Nun alle Zutaten vermengen und für 30 Min. marinieren.

3. Für das Kimchi, die Gurke und den Apfel waschen und in Hälften schneiden. Die Kerne herausschneiden und in dünne Scheiben schneiden. Nun den Knoblauch schälen und fein hacken, dann alle Zutaten vermengen und bis zum servieren durchziehen lassen.

4. Zum Servieren die Udon Patties in einer Pfanne mit heißem Öl von beiden Seiten gold-gelb anbraten. Aus dem Rindfleisch zwei Burger Patties formen und in einer Pfanne mit heißem Öl von beiden Seiten 2 Min. anbraten. Nun auf alle Udon Patties etwas Frischkäse streichen und das Bulgogi Rind darauf legen. Das Gurken Kimchi verteilen und etwas Feldsalat darüber geben. Zum Schluss das zweite Udon Patty auf die Burger geben und servieren.
